Spotlight on Russia gets hungry  

 

Dear Spotlight on Russia, 

Hi! I’m Brian Rogers from Barnsley in the UK. My favourite food is fish and chips, but my mum says we should try something different. What kind of food do Russians like?  

 

Here in Russia, we have lots of different soups like borsch, solyanka, and okroshka, but my favourite is the shchi that my mum makes. It’s a cabbage soup with carrots and spicy herbs in it. I don’t like shchi with meat, but if you add a little smetana (a kind of sour cream), it tastes delicious with rye bread.

I’m a real meat eater and I love shashlyk, a kind of kebab. You can buy a shashlyk in restaurants, but I like getting one from street vendors who roast them on skewers over wood or charcoal.

I love maslenitsa because I love blini. They’re pancakes and there’s one week of the year when we eat lots of them. You can cover them with butter and eat them with sour cream or caviar, but don’t try eating them with both because it tastes disgusting.

The pelmeni that my dad makes are fantastic. Pelmeni are a type of dumpling that are usually made with a minced meat filling made from 45% beef, 35% lamb and 20% pork, but my dad says he has his own secret recipe. They can be frozen until you want to eat them. You just boil them till they float and then wait 2-5 minutes more before serving them with sour cream or mustard.

I’ve just learnt how to make kotlety. You put milk, chopped onions, ground beef and pork in a bowl and mix them thoroughly. It’s a good idea to dust your hands with flour before you roll the mixture into patties because this stops everything from getting too sticky. Then you just pop the patties into a frying pan and cook them. Everyone in my family likes my kotlety

Write in and tell us what your favourite food is. 

My favourite food is Olivier salad, a traditional Russian dish often served at celebrations like New Year’s Eve. I love Olivier salad because it is tasty, fresh, and reminds me of happy family gatherings.

 

Do you (or your parents) have a special way of preparing it?  

My family has a special way of preparing it. We use boiled potatoes, carrots, eggs, pickles, peas, and cooked chicken or ham, all diced into small pieces. Then we mix everything with mayonnaise and sometimes add fresh herbs for extra flavour. Each family has its own recipe, and ours includes a little bit of mustard for a unique taste. I enjoy helping to chop the ingredients and mixing the salad. Olivier salad is a dish that brings everyone together and creates a festive mood.

My favourite foods are traditional Russian dishes like pelmeni and borscht because they remind me of home and family. I like pelmeni because they are warm and comforting, and borscht because of its rich, vibrant flavour. 

 

Do you know how to make any meals?

Yes, I do know how to make some meals! For example, I can prepare blini (Russian pancakes) by mixing flour, eggs, milk, and sugar, then cooking the batter on a hot pan until golden. I also know how to make a simple salad with fresh vegetables like tomatoes, cucumbers, and greens, dressed with olive oil and lemon juice.

 

Which foreign foods do you like?  

As for foreign foods, I really like Italian pizza and Japanese sushi. I enjoy pizza because of its variety of toppings and flavours, and sushi because it’s fresh and healthy. Trying foods from other countries helps me learn about different cultures and tastes, which I find exciting.
